NOTES: 

We have spent some time perfecting the roast of this coffee using an SR800 W/EXT.  We discovered that this coffee requires a longer roast time at lower temperatures than a typical washed coffee. After hitting the first crack, we lowered the temperature to allow more time between the first and second cracks for better flavor development. The result was a total roast time of 11 minutes and 30 seconds, with a weight loss of around 14-15%. We continue to roast this coffee in an attempt to bring out even more flavors. If we come across any new information, we will update our post.
